Black beans have a mild earthy sweet taste and velvety texture that hold their shape well. They are ideal with spicy flavours and hot seasonings. Directions for use: Soak the beans overnight in cold water. After soaking, replace water and bring to a fast boil in a large pan. Let them cook for 10 minutes and then simmer for approx 30-45 minutes or until soft. At this point they can be frozen in batches with some of the cooking water or used immediately.
